What is Foie Gras?

A French delicacy, Foie Gras is the fattened liver of a duck or goose. In fact, ‘foie gras’ means “fatty liver” in French. It is lightly pink or cream in color, and its texture is extremely delicate. It must be cooked with the utmost care as all of the fat in the liver can melt away if cooked improperly with high or prolonged heat. Why is Foie Gras Special?

The ducks and geese must be fed high-calorie diets of corn and grain several times a day to enlarge their livers beyond their normal size. This can take several weeks. While these breeds of waterfowl commonly gorge themselves to have energy for long flights before migration, it’s a lengthy process to wait for them to do this naturally.

The Different Grades of Foie Gras

Like any luxury product, raw foie gras is categorised in different tiers for their quality.

Grade AConsidered the highest grade of foie gras. It’s made distinct by its large size with a firm body, shiny exterior, and smooth texture. The color across this piece of liver is consistent, with no blood spots of blemishes. It’s known to have a sweet smell. This grade of foie gras is best prepared by a simple sear or sauté. 
Grade BThis grade of foie gras has the same indulgent taste of Grade but is smaller in size and weighs less. Appearance wise, it is flatter, softer in texture, and darker in shade. Additionally, there can be slight veins or defects in the overall look of the liver. 
Grade CGreat for patés, terrines, or mousses, Grade C foie gras is commonly used for flavor. It has a more coarse texture and robust taste. It’s used as a component to enhance the flavor of dishes rather than act as the star ingredient.
