The word ‘caviar’ is rarely unspoken in luxury spaces. But what is caviar? These briny delicacies are so often enjoyed, but where do they come from? Beneath its extravagance lies a fascinating story. Read on to learn more about caviar and all of the curiosities you might have about it.

What is Caviar?

Caviar is a delicacy consisting of salt-cured roe from sturgeon. Roe is the fully ripe internal eggs found in female fish and certain marine animals. It’s commonly consumed raw, but can also be eaten smoked or cooked. It’s desired for its salty and savory flavor, as well as distinct popping texture.

How is Caviar Made?

Caviar isn’t made as much as it is extracted. It’s taken from the ovaries of a matured female sturgeon. Caviar farmers will remove the ovaries of the sturgeon and extract the roe (ripe eggs) from it. These “eggs” are then cleaned to remove impurities, followed by a light salting to cure the eggs and enhance their flavor. They are then dried to reduce excess moisture and graded – separated by color, size, and texture. These categorised eggs are then packaged into the tins or jars to be sold. Caviar is normally stored in refrigerated rooms until its time for delivery, allowing the flavor to develop in their casings. 

Types of Caviar

Though over 25 species of sturgeon exist, there are four main, traditional types of sturgeon caviar. 

BelugaBeluga caviar has a reputation for being the most expensive type of caviar in the world. It’s known for its large, delicate and buttery eggs in shades of light grey to black. Caviar connoisseurs say it’s a variety of caviar with the least fishy undertones. Due to its subtle flavor, it’s often served by itself on toast.
OssetraOne of the most popular types of caviar across the globe, Ossetra caviar is sought after for its firm texture, and nutty, rich flavor. Its color ranges from dark brown to golden. The lighter the color of the eggs, the more rare the caviar is considered to be.
SevrugaSevruga caviar is known for its smaller, darker pearls and intensely salty flavor profile. It’s a great choice for those who prefer a robust taste. Of the main four caviars, it is the most approachable in price. This makes it the popular choice for larger gatherings or thoughtful gourmet gifts.
SterletCreamy, buttery, and with a lasting flavor, Sterlet caviar is known to be prized by royalty. Its pearls are small to medium in size, and usually light-gray to gold in color. Its flavor is both intense and delicate, making it a highly regarded choice for those with refined palates. The rich, concentrated flavor is often described as a “masterpiece of wild fish” taste.

What are the Benefits of Caviar?

Caviar is considered a nutrient-dense superfood. In small serving sizes, it provides significant health benefits due to being high in essential healthy fats and vitamins. 

  • Being rich in omega-3 fatty acids, it can help improve skin health. 
  • It contains a lot of Vitamin B12, which has been known to help reduce fatigue and supports heart health by lowering homocysteine.
  • Caviar has a lot of selenium, which is a powerful antioxidant that can help reduce stress, boost the immune system, and protect cells from damage.
  • It also contains vitamins (A, D, E) that support heart, brain, and immune health.

However, it’s important to remember that caviar is a preserved delicacy, meaning it is high in salt content. It’s also extremely calorie dense despite all of the health benefits it offers. Enthusiasts of caviar must remember to enjoy small and mindful portions of it.

Is Caviar Halal?

For something to be considered ‘halal’, it has to be slaughtered a certain way and cannot contain pork, carrion, meat from predatory animals that hunt using fangs or claws, blood, or alcohol. While most other types of fish eggs are halal because they come from fish with both cycloid scales and fins, true caviar comes from sturgeon, which is a type of ancient fish that has scutes rather than cycloid scales. Scutes are bones embedded into the skin. To remove them, you have to cut away parts of the sturgeon’s flesh, which makes the fish ‘haram’ (or “forbidden” in Arabic). It’s also important to note that harvesting caviar is traditionally done by removing the ovaries of the mother fish, which results in their death. However, new humane methods have been introduced in recent years, allowing the caviar farmers to harvest the eggs without slaughtering the fish. Ultimately, while most can agree that a majority of sturgeon are haram, eating their roe is halal as it’s not the fish’s flesh.

What Pairs Well with Caviar?

Foods That Pair Well with Caviar

Classic components that pair well with caviar are blinis, crème fraîche or sour cream, chopped hard-boiled eggs (whites and yolks are usually separated), or finely diced shallots and chives. These components have a quite neutral flavor and a good texture so you can really taste the caviar.

According to Chef Nick Vonk, caviar works well with mild creamy textures (crème fraîche, sour cream, eggs), neutral starches (blini, potato), and subtle herbs (chives, dill, parsley). Strong acids, heat, bitter flavors and strong aromatics should be avoided as it will overpower the flavor of the caviar.

Drink That Pair Well with Caviar

Champagne (brut or extra brut), dry sparkling wines, or dry white wines like a Sauvignon Blanc. Caviar tastes very rich, so a dry champagne or wine with a good amount of acidity would accompany it well.

I haven’t done it myself but I tasted it before with Japanese food and it worked quite well with sushi/sashimi and other rice-based dishes.
